Quick howto about changing the start icon under gnome:

1. Start gconf-editor
2. Go to app->panel->objects
3. Look for an object of type “menu-object”
4. Check the “use_custom_icon” option
5. Set the path to the custom icon in option “custom_icon”

The change shall be taken into account immediately!
